Shandong Scallion Pancake
What is a scallion pancake? They come in different thicknesses, sizes, tastes, densities... In short, scallion pancakes are dough kneaded with chopped scallions, and sometimes salt and oil, and then shallow-fried in oil. In my mind, a perfect scallion pancake is one that is fluffy, flavorful, and slightly crispy on the outside. Since coming back to Taiwan, I did not want to try them, since I was worried that I may end up with one that is dry, hard, dense, flavorless...
