Shandong Scallion Pancake
What is a scallion pancake? They come in different thicknesses, sizes, tastes, densities... In short, scallion pancakes are dough kneaded with chopped scallions, and sometimes salt and oil, and then shallow-fried in oil. In my mind, a perfect scallion pancake is one that is fluffy, flavorful, and slightly crispy on the outside.
Since coming back to Taiwan, I did not want to try them, since I was worried that I may end up with one that is dry, hard, dense, flavorless... A few weeks ago, though, as I was leaving home to go to the Zhishan MRT station, I came across a scallion pancakery with a line out the door. Well, if this is not a sign!
I later heard from a friend that this place is called "Shandong Scallion Pancake," nick-named "If the light is on there is cake." I was so distracted by the crowd outside I didn't even notice the light!
How is the scallion pancake? Golden crispy on the outside and fluffy on the inside, just the way I like it! Guess this will be my "go to" when "the light is on"! LOL
Other than the fluffy golden type of pancakes (They are more like pies), they also have the thick type. For those who like to DIY, they also sell freshly kneaded dough with scallions. We were out filming at the National Palace Museum last week, so took D to try it out for the first time. He seemed to prefer the denser one.Shandong Scallion Pancake
